Savoury Meatballs With Gravy

It’s February, and I’m ready for spring. The days are starting to get a little longer and I just can’t wait for the warmer weather to hit!

Today it’s snowing and outside my window it still looks very much like winter.

I don’t know about you but on days like this, I’m in the mood for some comfort food. These meatballs and gravy served over creamy mashed potatoes with a side of steamed carrots fits that category perfectly!

Simple Ingredients-This recipe doesn’t call for any fancy ingredients, so chances are you won’t even need to run to the store for anything.

Delicious-These meatballs are packed with flavour!

Adaptable- I usually just wing it when I make these. They’ll still taste great if you swap out certain ingredients for others!

Ingredients

Ground beef– I’ve only ever made these with ground beef, but you could try swapping the beef out for ground pork.

Onions- I use fresh onions. You could omit the onion slices in the gravy but you’ll lose a lot of flavour! Simply strain the onions after cooking the gravy out you’re not an onion texture lover.

Bread crumbs- I always use Panko crumbs. To make these gluten free swap out the bread crumbs for oatmeal

How to make savoury meatballs and gravy

Step 1- Mix together ground beef, half of the chopped onion, eggs, bread crumbs, ketchup, mustard and spices. Mix together till well combined.

Step 2-Using a large cookie or muffin scoop, scoop meat into your hand and pack nice and firm, until you’ve made balls from all your meat. Transfer to a sheet or plate.

Step 3-Place your meatballs into the fridge for 15-30 minutes. This firms them up so they don’t fall apart while you fry them! During this time I like to gather and prepare the for the gravy.

Step 4- Once your meat is cooked, pre-heat your skillet and add 2 Tbsp olive oil. Fry your meatballs for 2-4 minutes on each side, or until browned. You’ll want to leave some space between each meatball so you have space to flip them. Once they’re browned on each side, transfer them back into another dish.

Step 5- Take the other half of your onion and cut it in slices. Now in same pan that you fried the meatballs in, add butter and onions. Fry until they are tender and a little browned.

Step 6- When your onions are ready, add water, chicken broth, beef bouillon and garlic powder. Heat until boiling.

Step 7- Mix cornstarch and water, then slowly pour into your gravy while stirring constantly with a whisk or spoon. Mix until fully incorporated. You may need to add more of this water/cornstarch mixture to get your desired gravy thickness.

Step 8- Transfer your meatballs back into your pan put the lid on and simmer for 1/2 an hour.

Step 9- Serve over creamy mashed potatoes and enjoy!

Tips

  • While frying the meatballs don’t worry about fully cooking them. They’ll have time to cook in the gravy later on.
  • Don’t scrape out your pan before frying the onions. The bits of browned meat give the gravy an amazing flavour!
  • These meatballs freeze well! Make an extra batch and freeze for a future meal or if you need a quick meal later on this week…
  • Prepare the meatball mixture ahead of time and keep in the refrigerator for up to 5 days!
